Recipe of the Week

Broccoli Rice & Cheese Casserole

Ingredients:
1 medium onion, finely chopped
2 10oz pkgs of frozen broccoli, cooked and drained
1 stick of butter
2 cans cream of chicken soup
6 cups rice (wild rice is great with this)
1 clove of garlic
3 cups of shredded cheese

Cooking Instructions:
Preheat oven to 350°F.

In a skillet melt the stick of butter. Sauté onions and garlic, until the onions are tender. Set aside to cool.

Steam the frozen broccoli until thawed, then drain well. Let cool.

Cook rice according to the directions.

It is important to allow the warm ingredients to cool before mixing everything together so the cheese doesn't melt too soon.

When sufficiently cool, reserve 1/2 cup of the cheese and mix remaining ingredients together. Put in an oven-proof baking dish or casserole dish (or 2 if needed).

Spread reserved 1/2 cup of cheese on top. Cover with foil.

Bake for 20 minutes, remove foil; bake an additional 5 to 15 minutes, or until cheese on top is hot and bubbly.

Makes approximately 12 serving

Monday Member Spotlight

Our "Established Member" this Monday is Brooklynsmom!

"I'm 26 and originally from Ohio. My husband (also from Ohio) and I have moved 3 times in the last 3 1/2 years for his job. Brooklyn was only 2 months old when we moved to Rochester. We decided I was going to be a SAHM and after being in my house with not much to do and going crazy without much adult conversation I actually saw an add for a different mom group. I thought about it, but I had to pay to do it so I started looking online and found RM.

I absolutely love RM because everyone is so friendly and willing to offer up thier advice and own experiences. Being connected with so many other moms has definately made me realize that I'm not alone in anything. I also love getting together with people. Through an area group girls night out I met one of my [now] best friends. On top of having friends on RM and support in general Brooklyn also has a way to socialize. Although I love being a SAHM I did worry about her not being able to socialize like if she would if in daycare, but I don't have to worry about it anymore."

Amy is from Henrietta and has been a member of RM since June 3rd, 2008. She is the co-moderator for the South Area Group.

Recipe of the Week

This is probably one of the easiest Mexican dishes you'll make. The chicken comes out very tender, and there's not much to it! Goes great with Spanish rice and cornbread!

Mexican Chicken Breast
Ingredients

1 pkg Taco Seasoning *
4 (4 oz) boneless, skinless chicken breasts
1 cup salsa
1/4 cup reduced fat sour cream

*Instead of Taco Seasoning you can use chili powder, onion powder, garlic powder, and cumin to keep the sodium content down

Directions

Put chicken & taco seasoning in Ziploc bag; shake and coat well.
Place breast in casserole dish sprayed with nonstick cooking spray.
Bake in 375*F oven for 30 minutes.
Top with salsa 5 minutes before done.
Garnish with sour cream just before serving.

Member Spotlight

Every Monday we will be doing a "member spotlight." We'll introduce TWO members of RochesterMommies: one who has joined us recently, and one who has been with us for a while!

Our members today are caseypop and Alliesmommie.

New Member Spotlight:
caseypop

"Hi, my name is Casey; I’m 24 yrs old. I have a 2 (almost 3) yr old monster, I mean son named Jason. I just escaped a really bad relationship where I became isolated from all my family and friends, and am trying to meet new people and start a new life. Which is a lot harder to do with a 2 yr old at your side. So I was looking through Craig list the other day and an article about Rochester mommies.com came up. So I checked it out and so far it seems like what I have been looking for. A place to socialize myself and my son and much more I'm sure. I hope to meet new friends for myself and my son and start enjoying life again. The activities on the calendar sound fantastic and full of fun for me and my son. I’m looking forward to the picnic coming up in a few weeks; in fact I am going to the location today after the zoo to check out the location."

Casey is from Mt Morris and has been a member since May 28th, 2009. She is a member of the Events Committee.

Established Member Spotlight:

Alliesmommie

Tricia lives in the Finger Lakes region, and is the the mommy of one beautiful little girl, Allie (4). This year she will be getting married! She has been a member since April 12th, 2008, and is a member of RM's Hospitality and Recruiting committees.

"I came to RM looking for other friends who were moms, because being a single mom I wanted to meet others like me and have more interactions with new kids for my daughter. It also didn't hurt that a friend of mine is in TriangleMommies and pointed me into the direction of RM. I love RM because we support each other in all that is going on in our lives, and has so many options of groups. I have gained a lot of great friends and knowledge since coming to the site. I would recommend joining RM to all my moms because it is such a fabulous group of women!"

RM Charitable Events

July 7th RM will be heading over to the Ronald McDonald House to help put on a BBQ for the families there.

*****
From their website:

Many families travel far from home to get treatment for their seriously ill or injured children. The treatment may last a day, a month, or even longer. It's a long time to be away from home, or to divide a family.

Ronald McDonald Houses around the world offer families a way to stay together, in proximity to the treatment hospital, and be comfortable and cared for during their stay.

*****
This is a great way to reach out to these families, and you'll always get something in return: the knowledge that you brought a little bit of joy to someone; that you showed kindness.

So be sure to check out the RM Has Heart Forum for more information as it is provided.
